Banana + Almond Butter Granola Bars

Servings 12 Bars


  • 3 Ripe Bananas (Peeled)
  • 1 tsp Vanilla Extract
  • 1 Tbsp Coconut Oil
  • 1/4 Cup Brown Rice Syrup
  • 1/4 Cup Smooth Almond Butter
  • 1/2 Cup Raw Chopped Almonds
  • 1/2 Cup Cacao Nibs or Chocolate Chips
  • 3 1/2 Cups Rolled Oats
  • 2 Tbsp Chia Seeds
  • 1/2 tsp Cinnamon


  1. Preheat the oven to 350 degrees fahrenheit. 

    2. In a food processor or blender blend together the bananas, vanilla extract, coconut oil, brown rice syrup, and almond butter until smooth. 

    3. In a medium sized bowl add the banana mixture and stir in the oats, cacao nibs, chia seeds, chopped almonds, and cinnamon. 

    4. In a lined baking tray (8x12) add the granola mixture and smooth over using a spatula to make it even. 

    5. Bake for 40 minutes. 

    6. Allow the slab to cool and cut into 12 granola bars (you can drizzle with some melted chocolate too!).
