My first post of 2018! 2017 flew by and it was full of travels, family, and food; which I cannot complain about! I haven’t updated the blog in a little while… almost two full weeks (yikes!), however over the holidays I wanted to focus on being present with my friends and family. I barely get to see my close friends as one studies in the United Kingdom and my other close friend since elementary school studies in Ontario. Slowing down and taking the time to be present with the ones that you care about and love is incredibly important so you can cherish life’s moments.
In 2018 I am focusing on slowing down and treating myself right… Writing out my 2018 intentions this past week will hopefully help me stay on track and better myself mentally and physically. If you want to start changing the way you live your life start writing out your goals or intentions to help hold yourself accountable. Some of my intentions for 2018 include incorporating more hygge into my life everyday (I will write a post on hygge in the future!), doing a coconut mask once a week, practicing gratitude in my Five Minute Journal, turning off social media an hour before going to bed, and generally slowing down to focus on myself so I can give more to others around me.
In 2018 I really would like to add more lifestyle to the blog and share with you my favourite things that I find helpful and general wellness. If I am being honest I sometimes find it hard to find my voice with blogging as there is so much I want to say!
Onto the recipe (cause that’s what everyone is here for am I right?), this cinnamon overnight muesli is one that I made for Bespoke Cycle’s Christmas pop-up event, and everyone absolutely loved it from “this is the best thing I’ve ever had” to “you need to send me the recipe.” So I shared it on Instagram before here so that everyone could get their hands on this super quick and delish breakfast. Vanilla + Cinnamon Overnight Muesli
- 1 Cup Rolled Oats
- 2 Cups Almond Milk
- 4 Tbsp Coconut Yogurt
- 1 tsp Cinnamon
- 2 tsp Chia Seeds
- 1 tsp Vanilla Extract
- 2 Tbsp Raisins
- 2 Tbsp Dried Goji Berries
In a mason jar add the almond milk, vanilla, coconut yogurt, cinnamon, and chia seeds.
2. Stir until well combined.
3. Add in the oats, raisins, and goji berries.
4. Stir with a spoon and allow to set in the fridge overnight.
5. Top with granola, almond butter, apple, and a splash of almond milk.
6. Keeps well in the fridge for up to three days.
