Pumpkin and Banana Oat Bars

These pumpkin and banana oat bars are the perfect energy boosting snack. I make a batch of oat bars every week to keep myself from grabbing less healthier and prepackaged snacks before I go out the door to classes in the morning. I have a 7:30 am class every Monday and Wednesday so I definitely need something quick and easy in the mornings. I think it’s a miracle I can even get somewhere at 7:30 am, let alone trying to make breakfast before then is just not going to happen, so these guys come in real handy! I hope you enjoy this recipe!

Pumpkin & Banana Oat Bars

Difficulty: Easy 

Makes: 8

What You Will Need: 

  • 2 cups rolled oats
  • 1 cup puffed rice
  • 1/4 cup raisins
  • 1/4 cup pecans (chopped)
  • 1/2 cup pumpkin seeds
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp all spice
  • 1/8 tsp ground cloves
  • 1/2 cup puréed pumpkin
  • 2 ripe bananas (mashed)
  • 2 Tbsp maple syrup

Method: 

  1. Preheat your oven to 370 degrees F.
  2. In a large mixing bowl mix the mashed bananas, pumpkin, and maple syrup together.
  3. Fold in the oats, puffed brown rice, raisins, pecans, pumpkin seeds, and spices.
  4. Line an 8 x 8 baking tray with parchment  paper and pour the oat mixture in smoothing it out to make it nice and even.
  5. Bake for 30 minutes.
  6. Allow the pan to cool and slice the slab into 8 pieces. Enjoy!
